Gastrointestinal discomfort and confusion

Hello,
I have now had the following complaints for the 3rd or 4th time in the last few months, somehow I feel like it is getting more intense each time. Right now, it has hit me again. The day before yesterday I didn't feel quite right, but I blamed it on the rainy weather. In the evening I had a few sips of red wine (half a glass, really not much) and suddenly I felt drunk. A bit confused, a bit sensitive to light, really strange somehow. I thought to myself, it can't be from just a little bit of wine, right? I went to bed early, thinking that sleep always helps. But I was very restless in bed, which was very unsettling for me. When I woke up in the morning, it wasn't much better. I was still confused, sometimes I couldn't concentrate on thinking, so I was confused when speaking or writing. And I had this feeling of an infection in my stomach and on my bronchi. I went to the doctor. I also notice right now as I type this text, I have to correct every 20th word because I make typos. At the doctor's office, my blood pressure was 130/86, blood sugar 75, EKG was normal, they also listened to my bronchi, but the doctor said everything was okay. So I went back home. I was very tired and also had a few sweat outbreaks and stomach ache. No vomiting, but a little bit of nausea, but not too bad. And this feeling of congested bronchi. I slept again, but still not much better today. If it's like the last few times, I should feel my lymph nodes under my armpits today, get a slightly elevated temperature (sublingual 37.5°), and after 2-3 days it should be gone. At least that's how it was the last 2-3 times.
Brief background: In recent years I have had panic attacks and abdominal complaints from time to time. Earlier this year I had a kidney infection, which was successfully treated with antibiotics. Continued abdominal complaints, my GP ruled out Crohn's disease with a blood test and ultrasound. We then assumed it was irritable bowel syndrome and I have been taking Symbiolact Comp since the beginning of August. The abdominal complaints disappeared immediately after the first dose, until now.
What is bothering me now:
What could it be that I repeatedly get these, I would say, infections? Always involving my stomach and bronchi, confusion, lack of energy, tiredness, and then slightly elevated temperature for 2-3 days. Or could it be that I'm eating something wrong so often? I somehow don't believe in that anymore.
I am also afraid that it is getting more intense each time. This experience of spontaneous drunkenness without sufficient alcohol consumption is very unsettling to me!

Dear questioner, please have yourself examined by a gastroenterologist. This sounds like more than just psychosomatic complaints. Histamine intolerance should be ruled out and if necessary, a colonoscopy should be done in my opinion.
