Can allergies suddenly occur even though I didn't have them before?

my name is Rolf Stamm and I have a question regarding allergology. In the past few weeks, I have noticed that I suddenly seem to be allergic to certain foods and environmental factors, even though I have tolerated them without any problems in the past. I am concerned because I have never had allergies before and I do not know why they are suddenly appearing now.

For example, I have noticed that after consuming peanuts or coming into contact with certain pollens, I experience symptoms such as rash, itching, and difficulty breathing. These symptoms are new to me and occur repeatedly when I come into contact with the allergens.
